I play a lot of games online, mostly FPS and these days it's relatively limited to console action save for some TF2 action here and there on my PC. Like the majority of people out there I play the Call of Duty franchise on my 360 and a little Killzone 2 on the PS3. Just to be clear, this is directed at the CoD crowd. Now that the formalities are out of the way, let's get to the good stuff.
When you're playing a FPS a lot thing happen that frustrate the hell out of you and this is my basic list:
1. I get killed by somebody jumping and shooting. At no point should this ever happen. With modern games and all of the triggers on accuracy, somebody jumping should never be able to hit me. It happens so frequently I want to put my controller through a TV. Stop jumping around like a Kansas City faggot and play the game right.
2. I remain still and crouch while burst firing slowly with an accurate weapon, while my crosshair is on another player only to miss on every shot. I'm not a n00b, I've been playing shooters for nearly 15 years now and like a fine wine, I've gotten better with age. This could be a drawback of playing on a controller vs. keyboard and mouse, but if I'm right on somebody, they need to fucking get hit. Sure lag will come into play here and there, but I'm no slouch with the accuarcy and the bullets just won't register from time to time. When they do, the other guy is turning around and firing. Which leads me to...
3. Random ass death by a guy spraying and praying. CoD online seems to be a game that rewards a general random fire as opposed to the carefully placed shots of a crouched assassin. Killcams are great that can show you why you died in a legitimate way sometimes, other times, they frustrate the shit out of you. I referrenced accuracy above and to watch somebody jerking their controller around the screen just randomly getting a headshot will send me into a frenzy.
4. Anybody past level 5 that still uses the Juggernaut perk. I get it, you suck and you feel like if you have more health, you'll last longer. All it does is piss me off that I have to waste more bullets to kill you. I'll put it out there that I mostly play with Stopping Power, which is supposed to counter the effect of Juggernaut. It doesn't always seem to work like that, but that's the theory. Just stop using Juggernaut all together if you've played online long enough to create your own class. All you do is make a fool of your self and make your mother cry because she failed to raise a decent child; man up and turn it off.
5. Snipers that clearly aren't anywhere close to me with their crosshairs when they kill me. Again, here's a big drawback of the kill cam. I see where you are as a sniper, but I also see how terrible your aim is. You know you shot 3 feet to the left of my head yet somehow I'm put down. How off must the hit boxes be for something like that to happen? Come on, we've all got broadband now. Make it a true 1:1 so I don't get killed in a bullshit method.
6. CoD:W@W related. Getting hit just on the side with a tank shell and not dying. Are you fucking kidding me? I shot a tank shell at you, and you managed to masterfully jump and have it hit right below your feet. Either you now have no legs or you're fucking dead. What's that? Your health regenerates and now you're coming at me with a satchel to kill me? You've now killed me because my second shell landed 2 feet behind you? Get real, you get nailed with a tank shell anywhere close to you and your guts have to be on the floor.
7. My knife makes the "kill noise and animation" but doesn't actually kill you. Again, how off are the hit boxes/collision detection pieces?
I'm sure I could go on forever about this crap, but I gotta draw the line somewhere. You guys have any frustrating experiences like this?

I may not play the game, but yeah, it really sucks when targeting is off. Lazy programming is what it is. We also gotta remember that not ALL physics have to work the same as real life...
If I played first person shooters, I'd probly think more hp was a good thing, and the scatter shot method would have to work because I'm so mouse challenged.

A truly fantastic grunge
I feel your pain, and I know exactly what you mean when you say you could go on forever. I hate (but I also love) how a smack to the head in any blunt object in any fps will immediately kill you, but point blank shooting someone with 100 bullets from some kind of mg leaves them at 1/2 hp and you're dead.
